Ingredients
3 egg yolks; beaten
½ cup sugar
¼ tsp salt
2 ½ tbsp cornstarch
1 tbsp butter
2 c scalded milk
1 ½ tsp vanilla extract
1 tsp banana extract
4 ripe bananas sliced in 1/8 inch slices
Directions
1 In a small sauce pan heat milk up, just to the point of boiling but DON'T BOIL.
2 Beat the eggs in the top of a double boiler pan. To the beaten egg yolks, beat in the sugar, salt, cornstarch and butter and scalded milk.
3 Cook over boiling water in a double broiler pan until thick; stirring constantly; remove from the heat, add the vanilla/banana extract and sliced bananas.
4 Pour into cookie crumb crust and chill
